Quattro Formaggi

Four cheeses go on, one at a time, and come out of the oven as a single molten thing.

• Mozzarella, the base that holds it together.
• Gorgonzola, sharp and a little bit blue.
• Fontina, nutty, melts into the gaps.
• Parmesan, grated fine over the top.
