  • Salami and Serrano ham, sliced thin.
  • A sunny-side-up egg, yolk still soft.
  • Flat-leaf parsley and black pepper, scattered over.

Huevos rotos means "broken eggs" — the whole point is to cut through the yolk and drag the fries through it, so the paprika and the cured meat do the rest. Best eaten as brunch, with a fork and no ceremony.
