This is the kitchen's pick rather than a fixed lineup — the chef chooses what goes on the platter each service, so the mix shifts with what's freshest and best that day. Steaming keeps the wrappers delicate and the fillings juicy; frying gives the other half a crackling shell. Both come out together, meant to be picked apart and shared while they're still hot.
