How it is made

Sauvignon Blanc is a grape that shows its surroundings more than most. Cool nights and altitude slow ripening, so the fruit keeps its acidity and the green, herbal aromatics that disappear in warmer sites. Trentino-Alto Adige sits at the northern edge of Italian viticulture, where the growing season is short and the diurnal swing between day and night is wide.

How it tastes

Green apple and citrus lead, with white peach underneath and a flinty, stony note that comes from the site rather than the winemaking. Mediterranean herbs and sage sit alongside elderflower on the nose. The acidity is high and the body light, so the wine finishes clean and dry rather than round.

Good to know

Sauvignon Blanc is grown all over the world, but the versions from the Italian Alps are often closer in style to the eastern French vineyards than to the riper New World examples. The grape's name is thought to come from the French sauvage, wild, for its habit of growing untrained in the vineyard.
