AC Fresh is a bottled apple juice from Thailand, sold in the 280ml size that turns up in coolers and on drink lists across the country. It is juice, not a juice drink: pressed apple, bottled, and left alone.
How it is made
Apples are pressed and the juice is bottled. Clear apple juice like this is filtered, which is why it pours a pale gold rather than the cloudy brown of an unfiltered press. Filtering also strips some of the pectin and solids that make fresh-pressed juice taste thick. What is left is clean and consistent from bottle to bottle.
How it tastes
Sweet first, with a soft acidity behind it and a finish that stays light. Apple juice sits lower in acid than citrus or pineapple, so it reads round rather than sharp. The flavour is green apple skin and honey, without the tannin or bitterness of a cider apple.
Where it comes from
Thailand grows very little of the apple it drinks. Most of the fruit behind a bottle like this is imported, pressed and packed locally, which is why the format is so often a small bottle rather than a carton. AC has been one of the names doing that in Thailand for years.
Good to know
Apple juice browns when it meets air, and the ascorbic acid added to most commercial bottles is there to slow that down, not to add vitamin C for its own sake. A sealed bottle holds its colour; an opened one starts to turn within a day.
